autumn has come and the temperature is going down quickly here. so i was wondering, what to cook to heat up my day and use my seasonal vegetables from the regional and organic delivery service. it is a real nice little organic online shop that trades vegetable and fruits from the local farmers around. as I live in a small city, without a farmers market and the supermarket lifestyle is lived by most people here, i am happy about having an alternative. and the awesome thing especially now that i am pregnant is, that they deliver once a week to my house. great!
here is the recipe for a nice meal, pumpkin potato wedges and indian dal:
ingredients:
for the wedges
- 1 small hokkaido pumpkin
- a handful of small potatoes
- 3tblsp olive oil
- pepper & salt
- chilipowder
for the dal
- 1cup of red lentils
- 1 clove of garlic
- 1 small onion
- 3cups of water
- 1tblsp coconut oil
- 1tsp mustard seeds
- 1tsp cumin seeds
- 1tsp coriander seeds
- o,5tsp pepper seeds
- 0,5tsp turmeric
- salt
- chili powder
instructions:
1) wash & brush potatoes and pumpkin
2) cut the potatoes into quarter and pumpkin in small stripes
3) put the vegetables in a bowl, ad olive oil, spices and salt, mix well
4) spread the spiced veggies on a baking tray and heat up in the oven for 180°c 25min.
5) cut garlic and onion very fine and heat up in a little pot with the coconutoil
6) put all spices in a mortal and grind them
7) add spices in the pot an heat them up with the onions for 1 minute
8) wash lentils and add them in the pot
9) add 3 cups of water, salt and turmeric and chili as you wish & let the dal boil on small heat for 20 mi, stir once in a while
10) as soon as lentils are soft and the veggies in the oven slightly brown, arrange everything on plates. if you wish you can add a salad of your choice. enjoy the meal!
