i love to cook international food. mixing my spirit with foreign cooking and some ingredients that i have around makes always a nice dinner. this time i was graving something mexican. here is my recipe for vegan chilli. its easy and if you have a lot of hungry friends coming, just make it double size and it feeds many people!

cooking ingredience

  • 1 capsicum
  • 1 red & 1 white onion
  • 3 pices of garlic
  • 3tblsp olive oil
  • 100g soy-granules
  • 1tblsp vegetable stock powder
  • 150ml hot water
  • 1 can sweet corn
  • 1 can kidney beans
  • 1 can tomato sauce
  • 1 can peeled tomatoes or 3 fresh tomatoes
  • pepper & chilli powder

 

 

directions

  1. mix up 150ml hot water with vegetable stock and soy granules and leave it for 10 min
  2. peel garlic and onions and cut it in little pieces, as well as capsicum
  3. heat up oil in a big pan and fry garlic, onions and cupsicum for 3 min
  4. ad tomato sauce, tomatoes, sweet corn, kidney beans, and the soaked soy
  5. flavor with pepper and chili and salt if needed
  6. let it simmer for 15 min, stir from time to time, until the sauce is little sick
  7. goes together well with rice or tortilla chips, or bread
